The Restaurant at Hotel Wailea is Hawaii's first and only Relais & Châteaux restaurant. They use creative island-to-table cuisine, which means that their menus are created around what is readily available from Maui’s own farms and fisherman. This guarantees that each dish is prepared with the finest local, seasonal, and artisanal products; including those grown in the restaurant’s garden and farming operation.
The Restaurant’s executive chef, Todd Alexandre showcases his progressive island-inspired dishes in their open exhibition kitchen. Every meal is cooked in front of the diner and presented with a theatrical flair. He carefully sources from regional farmers and fisherman, ensuring that each ingredient he uses has been grown or caught responsibly.
